We're introducing the companies recognized at the Sacramento Region Innovation Awards, presented by the Sacramento Business Journal. This is the runner-up in the food and agribusiness category. California Cultured is a 2020 startup producing ethical lab-grown cocoa, chocolate compounds and coffee free from deforestation and child labor. The Davis-based company takes cell cultures from cocoa pods and raises them in growing media. The company harvests the grown cells and ferments them to build flavor.
